Vegetable Upma

I totally understand your haste the morning as there are alot of chores such as preparing tiffins, leaving for work, taking care of your babies/children etc etc. This is one of the favourite routine breakfast. Quick and yet Simple! Atleast for me, if I make a healthy breakfast in the morning which is quick yet delicious, my day is much happier and sorted. It is the most important thing to eat right in the mornings and the rest of the day shall follow.

An Upma is a South Indian or a Sri Lankan dish. One of the pros of Upma is you can add any vegetable to this to make it healthy and delicious. This dish goes well with coconut or mint chutney.

So here is what I followed:

Before everything I boiled 3 cups of water and kept aside. Then I took a skillet, heated some oil, and put some mustard seeds and let it sputter.



Then I added a sprig of curry leaves and split chana dal.


Some green beans…


Some Carrots..


Some blanched broccoli…



Threw batches of some semolina and seasoned it with salt, and black pepper.

and roasted it for about 3-4 minutes.


Poured some hot water..


Stirred till it came together. Then I put it in a bowl and tilted it upside down on the plate for a presentable look.

1 cup semolina
1 tsp split chana dal
1 tsp mustard seeds
1 sprig of curry leaves
3 cups water
1/2 cup chopped beans
1/2 cup chopped carrots
1/2 cup chopped broccoli (blanched)
1 tsp salt
1 tsp black pepper

· In a skillet, heat oil and put some mustard seeds. Let it sputter. Add the curry leaves and chana dal. Along with this (on the side) boil 3 cups water.
· Now add some beans. Saute for a minute.
· Now add carrots and broccoli. Saute again for one minute.
· Add the semolina. Saute it for 3-4 minutes.
· Add the boiled water to the mixture and keep stirring.
· Serve it in a bowl or plate along some chutney






Apple & Carrot Sandwich

This is a little twist from the regular sandwiches that we have. Though the name of the sandwich sounds sweet but its not soo sweet. When you combine the cream cheese with apple it somehow subdues the sweetness of the apples. The combination of apple and carrot is nice and refreshing. It is one of the light sandwiches which you would like to have with some light flavors.

Somehow one of the mundane sandwiches that I sometimes land up having is cucumber and tomatoes. But this is a good replacement to it.

One of the must haves for a breakfast is Cream Cheese. Nowadays it is readily available in departmental stores. You can used cream cheese in any sandwich you prepare. It is lighter than cheese and yet gives really nice cheesy taste.

So here is what you would need:

Makes 6 finger sandwiches

½ cup apple
½ cup carrots
4 tbsp cream cheese
4 slices of bread
½ tsp salt
½ tsp black pepper

Mix apple, salt, pepper and 2 tbsp cream cheese in one bowl.
Take another bowl and mix carrots, cream cheese (2tbsp), salt and black pepper.
Cut the edges of the bread. Spread the apple mixture on one slice. Cover it with another slice.
Now put the carrot mixture and spread it. Top it with another slice.
Cut into three narrow finger sandwiches.

Its said what comes out first from your mouth is often a true opinion. So when Js tasted he said ‘its nice’.
To be honest I wasn’t sure how this would turn out but it was worth a try and definitely a repetitive sandwich. This is an adaptation from snack book.

Easy Everyday Sandwich

Atleast for me, the most difficult task is to think what to make for breakfast. I think of options that are healthy and quick in the morning. Often a sandwich is a easier option to make. The one I got for you today is simple and quick. Also, you can add or subract ingredients and make your own too! Cooking is an art, how you simply create a dilicious meal with different ingredients.

This sandwich I made with Salami, can have many alterations to it. Instead of Salami you can add boiled egg, roasted potatoes, or cottage cheese. The one with the boiled egg version is my favourite.

So here is what I followed…

Take a toasted bread.

Spread some cream cheese. You can choose plain or herb ones!

Toasted bread cream cheese


When I buy the lettuce, I usually soak it in chilled water. This takes out the dirt from the leaves. While using it I dab it in a plain cloth.
Add lettuce!!




Pour some veggies….& season it!!


Add the salami/egg!!




Mix the sauces and spread on the toasted bread…



Spread the sauce!!


Prepare your sandwich!!!….



Makes 2


4 toasted bread
1/2 chopped carrot
1/4 chopped red bell pepper
1/4 chopped yellow bell pepper
2 lettuce leaves
4 slices salami/ ham/egg/cottage cheese/roasted potatoes
1 tsp cream cheese
1 tsp ketchup
1 tsp mayonnaise
1/2 tasp mustard sauce
pinch salt
pinch black pepper

· Spread the cream cheese on the toasted bread.
· Put the lettuce leaf. Add the chopped vegetables, carrot and bell peppers. Season with salt and black pepper.
· Put the salami (if you want to put boiled egg thats a great option too!) .
· Mix the mustard sauce, mayonnaise and ketchup and spread on the other slice.
· Your sandwich is ready.

Verdict: Js likes to have this quite often. It suits me too, since its quick and simple. You just need to have the ingredients at home, rest is easy. Its like our daily breakfast. Maybe you can try too, some times its just different and nice from a normal buttered toast.

Chicken Salami Toasties with Jia & Bani

Well, Summer is the time when all the children come over to my place and we have all sort of fun. We enjoy from going shopping, jokes, playing, cooking and eating (hogging..our favourite!). So this time I decided to introduce my best pals in kitchen while I was preparing breakfast this morning. They are Bani and Jia. They are the sweetest and the most adorable kids. They too have a passion of cooking, so I decided to give them a bit of a push to follow their passion. We decided to make something that is children friendly and which they can cook for their parents and grandparents at home.

These girls are fun loving and always ready for mischief and ready to learn. It has been fun having them around and training them to make yummy food. As my son quotes “Mom, its yummy in the tummy”. The flavors of the sauce with salami and veggies were very palatable. Our breakfast this morning was wholesome and healthy.





Makes 10 slices

Time: 30 minutes


250 gm Chicken Salami

1 loaf garlic bread/ multi-grain bread

1/2 green capsicum chopped

1/2 onion chopped

1/2 tomato chopped

2 tsp mayonnaise

2 tsp tomato ketchup

2 tsp mustard sauce

2 cubes grated cheese



  1. Mix tomato ketchup, mustard sauce, and mayonnaise.
  2. Spread the sauce on the bread, place the salami, add the veggies and finally the cheese.
  3. Toast the bread at 220 degree Celsius for 15 minutes.
  4. Serve Hot.











Three Cheese & Sour Cream French Toast

Looking out for Christmas breakfast…u needn’t go any further. This recipes which I have got is relatively simple but needs to be prepared a night in advance. This a different version of a french toast or you could also call it a savoury bread pudding. Whatever you wanna call it, but the flavors in this toast are divine. Its got the most tempting ingredients such as sour cream and delicious flavors of three cheeses i.e Cheddar, Gouda and Parmesan. Somehow I feel each one of us, since childhood become addicted to cheese, cheese and cheese. This addiction hasn’t left till now.

This bread sort of melts into your mouth. It tastes somewhat like the filling in quiche. Its soft, gooey and eggy bread. Its serves as a complete morning breakfast or an evening snack.

Pop in chopped spring onions and a garlic clove into a blender.

Throw in the eggs!!

Add the gooey Cheese Chedar, Pasmesan and Gouda!!

Add the dollops of sour cream. Make it into a sauce. If its thick add some milk.

Layer the bread into a baking dish.

Pour the sauce over it!!

Cover it and keep it in the refrigerator overnight for the flavours to soak in!

In the morning bring it out of the fridge and bring it to room temperature.

Bake it in  the oven for 180 degree celcius for 30 minutes.

Preparation Time: 15 mins + overnight refrigeration;   Cooking Time: 30 mins  Serves: 2-3

Ingredients used:

4 slices of Wheat Bread

150 gm sour cream

1 spring onion

3 eggs

1/2 tsp salt

1/2 cup parmesan cheese

1/2 cup cheddar cheese

1/2 cup gouda cheese


Firstly, chop the spring onion and place it in a food processor along with the eggs. Add all the cheese, sour cream and salt. Blend it well till it becomes a thick sauce.

Then, Place the bread in a baking dish.

Now, Pour the sauce over the bread. Regrigerate overnight.

Lastly, bring it out of the fridge. Let the dish come to normal room temperation, then put it in Pre-heated oven at 180 degree celcius for 30 minutes.

Yogurt Idli

Sometimes its just monotonous to have eggs and milk in the morning.Yogurt Idli can be eaten as breakfast or a snack in the evening. I simply love South Indian food but it is sometimes a little time consuming to cook the whole meal. Yogurt Idli is a not actually a rice idli but we use bread instead. This is a very good quick breakfast. The flavours of this meal are totally South Indian. This gives a lovely taste of curry leaves and mustard seeds in it.

Set aside the curd in the strainer for about 5 mins. Meanwhile, heat a pan with some oil. Add mustard seeds and curry leaves.

Add the hung curd to it.

Spice it up! with some red chilli powder, coriander powder, black pepper and salt. Remove from fire and set aside the curd.

I usually have boiled potatoes in the refrigerator. Peel the potatoes.

Heat the pan and add mustard seeds, curry leaves, red chilli powder, tumeric powder, black pepper, salt.

Pop in the potatoes in the pan. Mash them well.

Add a few curry leaves.

Take a slice and place a sharp edge bowl and cut away the edges.

Remove the sides.

Spread the potaoes on the round slice.

Heat the pan and place the potato bread upside down on the pan.

Now add the prepared curd on the plain side of the bread.

Cover the pan with anything you have best in you kitchen. I covered with another pan. Simmer for 2-3 minutes.

Remove the lid.

I used the following ingredients:

For the Curd

1 cup curd

1 tbsp Oil

1/2 tsp mustard seeds

3-4 curry leaves

1/2 tsp black pepper

1/2 tsp coriander powder

1/2 tsp red chili powder

1/2 salt (at the end)

For Potatoes

1 tbsp oil

1/2 tsp mustard seeds

3-4 curry leaves

1/2 tsp black pepper

1/2 tsp coriander powder

1/2 tsp red chilli powder

1/2 tsp tumeric powder

1/2 tsp salt (to taste)

3-4 potatoes

5-6 slices of bread


  • When you seive the curd, donot stir it with the spoon. Let it rest without any disturbance. Make sure curd is thick.
  • Add the salt last to the curd otherwise it will leave water.
  • It is a good idea to boil the potatoes in advance.
