Rosemary and Garlic Chicken

Some how I have been really willing to use the flavor of rosemary in my food. So my recent trip to the grocery store demanded me to bring this new herb rosemary. It usually goes well with meat and chicken. So I decided to go with chicken. Somehow I enjoy using herbs in my cooking as it gives a very refreshing flavor.

Rosemary has some great health benefits such as it helps in cancer prevention, improving memory, pain relief,  mood elevator, digestive problems, and immune booster. Not only it is good for health but its pine-like aroma and pungent flavor goes well with chicken, lamb, pork, salmon and tuna dishes.

Ingredients:

1/3 cup olive oil

1/4 cup fresh lemon juice

2 lemon slices

10 garlic cloves, crushed

3 tbsp fresh rosemary leaves

2 tsp kosher salt

1 tsp freshly ground black pepper

3 tbsp olive oil

1 complete bone-in chicken

2 potatoes

Method:

  1. Mix olive oil, lemon juice, garlic cloves, rosemary leaves, salt, and black pepper. Stir it vigorously.
  2. Clean the chicken. Pat dry. Add the emulsified mixture to the chicken. Rub the mixture well with the chicken.
  3. Add cut potatoes and slices of lemon.
  4. Put a foil on a baking tray. Place the chicken, lemon and potatoes well.
  5. Grill the chicken for 30-40 minutes.

Verdict: Flavors are great with lemon and rosemary. Serve it instantly out of the grill. The flavors are great and also appreciated by young children.

Lemon Lemon Chicken

My favorite is a Lemon Fish which i usually order from a restaurant close by, but this is actually as good as a restaurant one. The combination of the chicken with some parsley , onions and red chili flakes gives it a unique flavor.

The Ingredients:

1 kg boneless chicken

1 teaspoon kosher salt

1/2 teaspoon black pepper

12 lemons

1 tablespoon lemon zest

2 tablespoons red wine vinegar (i used normal vinegar)

8 garlic cloves, minced

1 onion

1 teaspoon red pepper flakes

4 tablespoons chopped fresh oregano leaves/parsley leaves

1/2 cup extra virgin olive oil

 

Method:

  1. Preheat the oven to 200 degree Celsius
  2. Rinse chicken and pat dry. Liberally season it with salt and pepper. Place it in a large baking dish.
  3. Bake for 35 minutes.
  4. Squeeze the lemons to get 1 1/2 cup juice. Zest 2 lemons.
  5. Whisk in red vine vinegar,zest, garlic, red pepper flakes, onions and parsley.
  6. Finally whisk in olive oil, slowly, to create an emulsion.
  7. After 25 minutes of baking, remove the chicken from the oven. Drain all the liquid from the pan.
  8. Pour the lemon emulsion over the chicken. Return to the oven and bake for another 10 minutes.

Serve the chicken and sauce with hunks of crusty bread.

 

Lemon Rice

Though I live in North India and mostly eat North Indian cuisine, but there’s something about the food from the south which attracts me. I love the tanginess in the South Indian food. The flavors of lemon, tamarind, curry leaves and nuts are to die for. One of my hot favourite amongst all the food is ‘Lemon Rice’.

Lemon Rice has a peculiar taste. It comprises of strong flavors of mustard seeds, lemon and curry leaves. The ingredients in it make it different from the usual fried rice we have. It can be accompanied with raita (yogurt salad) or popadums. The benefits of preparing lemon rice: 1) easy to prepare,  2) can be made of leftover rice, 3) can be prepared within minutes with cooked rice and 4) tastes delicious and a complete meal.

Preparation Time: 15 minutes

Serves 4:

2 cups cooked basmati rice

2 tbsp canola oil

1 tsp coriander powder

1 tsp mustard seeds

3-4 curry leaves

2 green chilis cut length wise

1/2 cup peanuts

1/2 tsp ground ginger

1 tsp turmeric powder

Juice of 2 lemons

salt to taste

Method:

Heat oil in a pan. Put mustard seeds, curry leaves and green chilies.  Fry till the spluttering stops and add the ginger and peanuts. Fry for another minute. Add turmeric powder and turn off the fire.

Add lemon juice and mix well. Add rice, coriander powder and salt and mix well.

Serve Hot!
